So sorry for the delay in getting back to you! I have been in Uganda since the end of may and only had occasional internet access!
Thats great that you have found a project to volunteer at.
With regards to immunisations it is recommended that you are vaccinated against hep a and hep b, thyphoid and depending on the nature of the work you will be doing possibly rabies. You will need to make sure your Diphtheria, tetanus, polio and meningitis jabs are up to date too. It is essential that you are vaccinated against yellow fever, you will receive a certificate to prove this which you may be asked to show when entering/leaving the county.
Cameroon is a malarial area so you will need to take malaria tablets. These usually need to be started 2-3 weeks before your trip and taken for around a month when you return. There are daily or weekly tablets you can take. I personally find the weekly ones (lariam) better as have less side effects on these but they affect people differently.

Before visiting Africa I usually read up a bit on the culture. The Bradt travel guides are usually pretty good and I think they do one for cameroon so maybe consider investing in one of those, especially if you intend to travel around a bit too.
There are several airlines you can fly with. Cheapest ones appear to be Royal Air Maroc, Air France, Swiss, Lufthansa and Ethiopian airlines.
I have participated in numerous volunteer placements with ecoteer some ask for money in advance and I have never had any problems (ask for a receipt or email confirmation of payment though so you have proof that you have paid) If previous volunteers had encountered problems the project would no longer be advertised on this site so It will be absolutely fine.
